I give all fruits equal opportunity, but I love when pineapples and mangoes are in season. I play favorites. It’s not right, but I do.
When my favorite fruits are available, I make them into gazpacho de frutas, or fruit gazpacho.
This is simple recipe that can be modified to suit your tastes or to use whatever fruits you have on hand.

Fruit Gazpacho
Ingredients:
1 pineapple, diced into small pieces
2 mangoes, diced
1/2 red bell pepper, diced
1 jalapeno, seeded and diced
2 green onions, thinly sliced
1 garlic clove, finely minced
salt to taste
1 small handful of cilantro, chopped
zest and juice of 1 lime
1/2 cup queso fresco, crumbled
Tajin Fruit and Snack Seasoning
Directions:
Add all the ingredients together in a large bowl and toss to mix.
Top with a sprinkle of Tajin and a drizzle of Valentina hot sauce and serve it as a side dish, or dessert, or eat it with tortilla chips. It’s delicious served as a condiment on fish tacos with shredded red cabbage. Today, I ate it with a spoon and called it lunch. Whatever vehicle you choose to move it into your mouth, the fruit is the star of the show!
